Vienna loves its schnitzel. So much so that, according to estimates, the locals in the Austrian capital alone eat about 60 million schnitzels a year. They come in different varieties: the classic veal schnitzel—the real Viennese schnitzel—has just as many fans as those made from pork, chicken, or turkey.
OXBO, the restaurant at the Hilton Waterfront Vienna , has now been inspired to create something special: a brand-new, never-before-seen schnitzel creation. It’s set to takeVienna by storm as the “Dubai Schnitzel” . Can this work out?
Beautiful waterfront location
We’ve had an incredibly hot day, and we arrive at the Hilton Vienna Waterfront in the early evening for a tasting dinner. The temperatures are just right—the air is shimmering and feels like an Arabian desert. That’s why a spot like the terrace at OXBO Vienna Waterfront is just what we need. Here, you can enjoy a beautiful view of the Danube. The water flows lazily by, and every now and then a crazy person jogs along the promenade.

In true style, we choose beer to go with our meal. It’s served wonderfully cold and on tap—to our delight, it’s Ottakringer, from the city brewery. We pause only briefly to consider whether we really want the bread, butter, cress, and spread—after all, we both have a bottomless appetite for schnitzel. In other words: After the first schnitzel, the inevitable question arises: “What are we going to eat next?”
The Dubai Schnitzel Flavor
Unfortunately, they won’t tell us what kind of spread we’re putting on the small piece of bread. It’s reddish and tasty—that’s already a good start. Then it arrives: the Dubai Schnitzel, the very reason we came here in the first place. It’s a Viennese veal schnitzel in a crispy crust made of kataifi strands. We’ve certainly gotten to know those well enough, ever since the much-hyped Dubai chocolate.

They also make an excellent coating for schnitzel. We wouldn’t have thought so. Topped with pistachio crumbs, they create an interesting flavor that’s quite similar to traditional schnitzel, but the texture is much crispier. What surprised both of us: we got full incredibly fast. According to the menu, the side dish is truffle mille-feuille potatoes. We don’t know if they were simply served as plain fries because we asked if we could possibly leave out the truffle.
Should you try a Dubai schnitzel?
A semicircular chocolate praline, covered in kataifi and filled with pistachio cream, rounds out the meal. Even though we were certain just two minutes earlier that we were completely full, not a single crumb of the praline is left. It fills the last gaps in our stomachs and makes for a wonderful finale.

OXBO is already well-known in culinary circles for its cuisine, which is dedicated to high-quality ingredients and a modern farm-to-fork approach .
